chicken enchiladas


So you didn’t catch any fish and you need to come up with something for everyone’s dinner around the campfire. It pays to be prepared in advance. Tinned foods and other non-perishables always come in handy. We’ve covered some of this in our camping articles. These chicken enchiladas are so easy to make it is not funny. The idea here is that you don’t even need to prepare it at home before you go on your adventure. You just throw the ingredients together. And that’s great if you didn’t bring back a catch. This meal is not limited to the campsite either. There is nothing wrong with a dinner at home that only takes a few minutes to pull together, especially if you just burnt the roast.


Grab rotisserie chicken from the supermarket and make something really delicious for dinner with this recipe.


1 medium onion
1 tablespoon olive oil
1 can enchilada sauce
1 can chopped tomatoes
1 can beans
1 teaspoon dried oregano
1 teaspoon dried chilli
1 tablespoon packed light brown sugar
2 cups shredded rotisserie chicken


1-2 bags tortilla chips
As much shredded cheddar cheese as you want
As much shredded iceberg lettuce as you want
Some cilantro
Lime/lemon wedges and hot sauce

Making the sauce is easy. Start with the onion and cook until soft. Then add the other ingredients and cook ensuring you stir every now and then. This only takes a few minutes to warm up.

Simply serve with tortilla chips, the chicken mixture, cheese, lettuce and cilantro.
