QUICK DIPS UNDER 1 DOLLAR PER SERVING

Be ready for parties or great healthy snacks when you are watching movies with these easy-to-make quick dips. Each one of these recipes will serve 8 people and cost less than $1 per person.

SPICY CHEESE

Be sure to keep this one warm on a very low heat until serving.

INGREDIENTS

1 can diced tomatoes
1/2 teaspoon cumin
400gms shredded cheese
1 tablespoons chopped pickled jalapeños
1/3 cup whole milk
3 tablespoons chopped cilantro
Salt and pepper

DIRECTIONS

Combine tomatoes and cumin in a saucepan and bring to a simmer over medium-low heat. Add cheese slowly while stirring, just until melted, for about 2 minutes. Stir in jalapeños and milk, again slowly. Simmer over low heat, stirring constantly, until mixture is well combined. Make sure you don’t overheat this one. You can now add your cilantro and keep stirring while seasoning with salt and pepper. Keep this warm on a very low heat until you serve.

CHEESE AND GUINNESS DIP

Cheese and Guinness go together so well. You just can’t go wrong with them combined into a dip (or spread it).

INGREDIENTS

4 tablespoons butter
1 shallot, finely chopped
1 clove garlic, chopped
Splash of Guinness stout
150gms grated Cheddar
150gms cream cheese
1/2 teaspoon caraway seeds
1/2 teaspoon paprika
Salt and pepper
2 tablespoons chopped parsley
Assorted crackers and crudités

DIRECTIONS

Blend your Guinness, cheeses, caraway and paprika in a blender until smooth. Use the blender again to blend sautéed shallots and garlic in butter. Now put your Guinness and cheese blend back in the blender. Mix the whole lot and chill before serving.

CURRIED AVOCADO WITH GREEK YOGURT

This is another cool one for hot summer nights.

INGREDIENTS

1 teaspoon olive oil
2 tablespoons grated onion
1 teaspoon curry powder
1 cup plain Greek yoghurt
1 medium avocado, pitted, peeled and diced
1 tablespoon lemon juice
Salt and pepper

DIRECTIONS

Blend your yoghurt, avocado and lemon juice first. Then I like to add the onion mix in the blender until it is all smooth and season with salt and pepper to my liking. Finally, make sure you put this one in the fridge for a couple of hours before serving.

ICE COLD SPINACH

This is the easiest of cold spinach dips.

INGREDIENTS

1 package frozen spinach, thawed and squeezed dry
3/4 cup plain yohgurt
3/4 cup reduced-fat mayonnaise
2 scallions, thinly sliced
Salt and pepper

DIRECTIONS

Blend spinach, yogurt, mayonnaise and scallions in a food processor until smooth and season with salt and pepper. Keep covered and chilled in the fridge until ready to serve.
