Avocado Poached Egg


Avocados, so delicious when made into guacamole, or simply spread onto toast with a bit of salt, but did you realise they were a lot more versatile than that? Over the world people are eating them in many ways that you might not imagine, but you should definitely keep an open mind and give some of these simple recipe tips a try.


Rather than use the avocado as a topping, let’s use it as something to fill. You could cook mushrooms with cheese and put into the avocado then top with a poached egg for a lovely breakfast or brunch. Another idea is to bake them with an egg in the hole topped with chopped onion and tomato.


Boiled eggs have never been so tasty, in a blender mix the removed egg yolk with avocado, cilantro, lime juice, sour cream and salt. Put the mix into a plastic bag and cut a small hole in the corner. Now you can fill the rest of the egg with this tasty avocado mix, and top with a little cayenne.


Avocado can be mixed in with a white sauce to top a pasta, or could be chopped and added to a pasta as an extra ingredient (be sure to do this just before serving). However what you might not have heard of is that you can actually made avocado flavoured pasta! If you’ve never made fresh pasta before then perhaps this is your shot, as if you’re going to make something that takes so much effort you want to make it different to what you can get in stores. In a blender add cilantro, avocado, flour, water and then beat into a dough to later roll through the pasta maker. Go for a light vinegar dressing rather than a thick sauce, and add other veggies such as shredded carrot and cabbage.


Sounds strange, I know, but I’m so glad I took the risk to try one of these and you will be too! You could have it as the main flavour of the smoothie but even better is to mix it with other fruits like banana, berries, melon or mango. For example you could try a smoothie that mixes avocado, honeydew melon, milk, yoghurt, apple juice and honey.


Make your crumb base as you normally would, and then for the filling you’ll need avocado, cream cheese, sweetened condensed milk, lime juice, lemons juice, salt and whipped cream. Beat the mix until it is makes peaks and then you can put it in the base and after 4 hours cooling and setting in the fridge you are ready to go.


Another sweet one, mix in avocado with condensed milk, lemon juice, salt and blend. Then fold in some whisked heavy cream to the mix and freeze overnight. Don’t be disturbed by the green colour, after all we have mint and pistachio flavoured ice cream so it’s not too much of a leap.
